Full VM restore vs DR failover - which do I use?
Restore rebuilds from a recovery point. Failover promotes a target that replication kept ready.

The Short Answer
Different preparation, different speed
Failover is fast because the target already holds current replica disks. Restore works for any workload with a recovery point, even without replication - it rebuilds from the archive instead.
